Nice, malty pilsener with great hop carachter. Great aperitif.

Time in Boil: 90 min.
Primary Fermentation: 12 days at 9 C
Secondary Fermentation: 7 days at 9-2 C
Additional Fermentation: 3 months at 2 C

Procedure:

Double decoction mash. First rest 54 C. Pull first decoction (40% of mash) after 20 min. Heat to 72 C, rest for 20 min. Heat and boil for 15 min. Pour back into main mash to reach temperature of 69 C. Rest for 30 min. Pull second decoction (25% of mash). Heat and bboil for 15 min. Pour back to reach temperature of 70 C. Rest for 30 min. Sparge to collect 25 liters of sweet wort.
