Flaming Liberal IPA

This is a strong, very hoppy IPA. I made it after drinking many "Hazed and Infused" IPAs from Rockies Brewing. It's as hoppy as George Bush is corrupt. I named it for a very conservative friend of ours. He loved the beer, but hated the Bill Clinton label on it (Bill drinking a Bearded Dave Brewing beer.)
Specifics
Recipe type: Partial Mash
Batch Size: 5 gal
Starting Gravity: 1.075
Finishing Gravity: 1.016
Time in Boil: 90
Primary Fermentation: 6 days
Secondary Fermentation: 10 days
Ingredients:
- 6.5 lbs 2 row pale ale malt
- 1 lb Victory malt
- 1 lb 60 L Crystal malt
- 1 lb Munich malt
- 1 lb Wheat
- 8 oz Carapils
- 2 lbs Light Dry Malt Extract
- 3 oz Galena hops (90 min)
- 2 oz Cascade hops (5 min)
- 1 oz Columbus hops (5 min)
- California Ale Yeast
- 1 tsp Irish Moss
- 2 1/2 ox Cascade hops (dry hop)
Procedure:
Make 1,000 ml yeast starter day before brewing. Single infusion mash for 60 minutes at 154 degrees. Sparge for 60 minutes with 170 degree water. Add dry malt extract to boil. (I used 2 lbs of dry malt extract because my mash tun could only handle 11 lbs of grain and I wanted a high gravity. Now that I have a larger mash tun, I plan to make this beer again using an extra couple of pounds of 2 row instead of the dry malt extract). Boil for 90 minutes. Add Galena hops for whole 90 min boil. Add irish moss for last 10 min of boil. Add 2 oz Cascade and 1 oz Columbus for last 5 minutes. Chill, aerate for 1 hour, and add yeast. After 6 days, transfer to secondary and dry hop with 2.5 oz Cascade hops.
