Ingredients:
- 11 lb. 2-row Pale Ale malt
- 1 lb. 40-L crystal malt
- 1 lb. corn sugar

- 1 oz Nugget hop pellets, (12.1% AA), 60 min.
- .5 oz Cascade (5.4% AA), @ 35, 25, 15, and 5 minutes
- 1 oz. Cascade (5.4% AA), 2 week dry-hop
- Nottingham Ale yeast
Procedure:
Mash grains in 3.5 gal. water @ 152 °F for 75-90 minutes. Sparge with at least 4.5 gal. water @ 168°F; make sure your pre-boil volume is at least 6.5 gallons.
I boiled for 75 minutes, 15 for hot-break formation and removal, and 60 for bittering purposes. Chilled to pitching temp., (about 70°F, and pitched onto yeast). Ferment 1 week at room temp, then rack into 2° and dry-hop for 2 more weeks.
Bottle or keg, and allow to age about 3-4 weeks for sampling.
