I haven't tasted a better raspberry beer/ale. And has a decent cellar life.
Specifics
Recipe type: Extract
Batch Size: 5 gal
Starting Gravity: ,058
Finishing Gravity: .010
Time in Boil: 50 minutes
Primary Fermentation: 5 days
Secondary Fermentation: 3 weeks
Ingredients:
- 6# light malt syrup
- 1# amber DME
- 3/4# crystal
- 3 oz willamette
- 1.5 quarts defrosted raspberries
- Wyeast American Ale yeast
Procedure:
Crack crystal, bring to boil in 1/5 quarts water, strain.
Add malts & hops, boil 50 minutes.
Turn off heat, add raspberries. Let sit 15 minutes then pour contents into 6 gallon primary with 1.5 gallons cold water waiting. Add eyast when cool.
In 5 days siphon from primary to 5 gallon carboy.
