Batch Size: 5 gal.
Starting Gravity:
Finishing Gravity:
Time in Boil: 90 min.
Primary Fermentation: 2 weeks
Secondary Fermentation: 2 weeks
Ingredients:
- 12 pounds Marris Otter
- 1 lb. Gambrinus honey malt
- 1/2 lb.40 lovi crystal
- 1/4 lb. 60 lovi crystal
- 1 lb. dry pale extract
- 2 oz. Kent Goldings
- 1 oz. Fuggles
- 1 1/4 oz. Chinooks
- tsp. Irish moss
- 1/3/4 oz. Amarillo -Dry hop
- 1.5 oz. Oak Chips
- WyYeast London Ale
Procedure:
Mash grain, single step infusion at 154 deg for 90min.
mash out with 172 degree water
Boil for 90 min. with 4 hop additions.
Add 1 lb. pale dry at beginning of boil with first hop addition.
90 min. 1oz. Kent Goldings and 1/2 oz Fuggles
60 min. 1/4 oz. Chinook
30 min. 1 oz Kent Goldings and 1/2 oz Fuggles
1 min. 1 oz. Chinooks
Chill and pitch pint slurry of of London Ale yeast
ferment for 2 weeks at 65 degrees
Steam 1.5 oz. oak chips and add to secondary with 1 3/4 oz of Amarillo hops. Condition for 2 more weeks.
Bottle.
