After many year of brewing, this recipe was developed after my wife suggested that my beer was too high in alcohol. It has lots of flavor and a good spicy aroma, and is kind of "light".
Recipe type: All Grain
Batch Size: 5 gallons
Starting Gravity: 1.040
Finishing Gravity: 1.009
Time in Boil: 60 minutes
Primary Fermentation: 4 days @ 65F
Secondary Fermentation: 2 weeks @ 50F
- 7 # 2 row pale
- 1/2 # caramel (90 lv)
- 2 oz chocolate
- 1 oz tettnang (boil)
- 1/2 oz saaz (15min)
- 1/2 oz saaz (aroma)
- wyeast 1056 (chico)
mash @ 156F, sparge, add hops as indicated, chill, pitch yeast (optional from starter solution), ferment in glass carboy.
