Ingredients:
- 3.3 Lbs pale malt extract
- 7 Lbs 6 row malt
- 1 Lb Simpson Peated Malt
- 1 Oz Perle Hops 60 min
- 1 oz Saaz 5 min
- Yyeast Belgin strong ale starter made with one bottle of Duval (24 hours)
- 5 oz corn sugar primer
Procedure:
I mashed the 6 roe in 2 gallons of 145 deg water for 50 min. added the peated malt and raised the temp to 160 degrees, this was held for 20 mins; Then sparged with 1 gallon of 165 deg water.
I placed this wort in a five gallon stainless steel pot and brought to a boil, removed from the heat and added the malt extract then returned to a boil.
I added the Perle hops at this point and the Saaz at the 55 min mark.
Pitched the starter in a 6.5 gallon primary, fermentation started in about three hours and was done in 4 days this was at 65 deg. Placed in 6 gallon carboy for 7 days
It took about two weeks to carbonate and was real nice.
A very slight alcohol overtone with a hint of scotch taste in a nice golden color. TRY IT
