thick body, golden color, complex finish could benefit for age in bottle gets better every time i drink one. heady and very intoxicating aromas.

Time in Boil: 1 hr.
Primary Fermentation: 6-8 days
Secondary Fermentation: 2 weeks, longer?
Additional Fermentation: bottle condition for as long as possible
Ingredients:
- 8.oz english crystal 80l.
- 8.oz gambrinus honey malt
- 8.oz victory malt
- 8.oz vienna malt
- 6.oz wheat
- 2 lbs 2 and 6 row barley
- 8 lbs pale malt syrup
- 2 lbs honey
- 2 lbs maple syrup
- 1/2 lb organic rasins
- 3/4 ls organic dates
- 3 or more vanilla beans
- 10-12 hbus northern brewer bittering
- 6-8 hbus cascade flavoring
- 4-6 hbus hood aroma
- oak chips
- platinum high gravity ale yeast white labs.
Procedure:
boil 1 gallon add 2 lbs of barley mash at 165 f. sparge with half gallon at 165 f. add grain tea bag with specalty grains steep 20 mins sparge with half gallon at 165 f. bring the two gallons to a boil add pale syrup 1 lb honey and 1 lb maple syrup toss in date and rasins two vanilla beans and bittering hops, boil for 30 min. then add flavor hops and irish moss, boil for 15 min. add aroma hops and chill the wort.pitch yeast at 65 f. rack in to secondary with honey and maple left over,a little corn sugar never hurt add oak and another vanilla bean, secondary for two weeks,
