This is an exellent stout (if I say so myself!!:-)) and has a wonderful full flavour, Black as the Ace of Spades as my mother says of it!!coffee and chocolate notes are prominant, yet with a good balancing hop character.

Starting Gravity: 1.060
Finishing Gravity: 1.015
Time in Boil: 90 minutes
Primary Fermentation: 4 days
Secondary Fermentation: Takes place in the Barrel

Procedure:

Heat 25 liters of liqour to 84oC, add 15 liters to insulated mash tun wait for 3 mins for temp to settle, should go to about 79oC. Then add all the malts, this should drop temp to 65oC. Keep at this temp for 120 mins sparge to collect 20 liters of wort and boil for 90 mins with the Hops.After boil alow to settle for 15mins and then run off slowly through hop-back to collection tank, cool to pitching temp (20oC) make up amount to 20 litres with cold liqour,pour rapidly to Primary ferm. tank (To aerate)then pitch in yeast.When gravity drops to 1.018 (or thereabouts) drop to barrel for secondary ferm.
