La blanche de "Chez-Nous"

A really nice white beer in belgian style but with a taste of "Chez-nous" here in Quebec!! Have one for me!!!

Recipe type: All Grain
Batch Size: 5 gallons
Starting Gravity: 1.044
Finishing Gravity: 1.006
Time in Boil: 1h30
Primary Fermentation: 3 days
Secondary Fermentation: 8days

Ingredients:

Procedure:

Mash all the grain in 14.5 liters of water for 45 min. at 52 celsius. Raise about 23 litres of wort and boil it for 90 min. Add 1 Hallertau and 1 Saaz at the beginning of the boil. Add orange and lemon peels 30 min. before the end of boiling. Add irish moss 15 min. before the end of boiling. Add coriander 5 min. before the end of boiling. Chill and pitch yeast.
