This is not for everyone, but for those of us who love lambic...it is pure gold...you may want to add 2 to 3 oz's of peach extract at botteling for a little bit more peach aroma....

Starting Gravity: 1.047
Finishing Gravity: 1.002
Time in Boil: 90 mins
Primary Fermentation: 2 weeks at 65
Secondary Fermentation: 3 months
Additional Fermentation: 6 monhs

Procedure:

Dough in at 137, rest for 30 mins, draw off 2quarts of mash for first decoct, boil decoct for 20 min, add to main mash to raise to 145, hold for 20 min, draw of 3 qts, boil for 1o min, return to main mash hold at 155 untill conversion, add hops at 45min, pitch ale yeast, and ferment for 2wks, rack to secondary and pitch Lambic blend, boil grind peached in blender, boil this with the oak chips in about 2qts of water for 1 min, add to third fermenter, and rack lambic onto it, ferment this way for about six months, bottle with corn sugar, and age for at least 3mo's
