This is a great summer ale for those who enjoy a good dose of English hops. It has a reddish or chestnut brown color which also enhances this beer.

Recipe type: All Grain
Batch Size: 5 gallons
Starting Gravity: 1.045
Finishing Gravity: 1.011
Time in Boil: 60 minutes
Primary Fermentation: 1 week
Secondary Fermentation: until done
Ingredients:
- 7.5 pounds Pale Ale malt
- 0.5 pounds Carapils
- 0.5 pounds Crystal malt 120 L
- 1.5 oz chocolate malt
- (can substitute 1 pound Crystal malt 60 L and 2 oz chocolate malt if 120 L is not available)
- 1 oz Northern Brewer
- 2 oz Kent-Goldings
- British ale yeast
- 3/4 cup corn sugar if bottle conditioned
Procedure:
Mash grains at 151 F for 1 hour or until iodine test shows complete conversion. Sparge and obtain 6 gallons of wort. Boil for a total of 1 hour with the addition of the Northern Brewer at the beginning of the boil, 1 oz of K-G at 30 minutes and the last oz of K-G at 55 minutes (the last 5 minutes). Cool and add yeast at ~ 68 F.
