Everybody brews a Cascade showcase and I wanted my own with moderate maltiness and Cascade hops EVERYWHERE! I had rarely used Wyeast 1056, but wanted a clean brew with little fruitiness, hence 1056 and the low fermentation temperatures. This effort surprised me by producing an outstanding simple pale golden beer with maltiness in the palate and nose and Cascade hops in the nose, mouth, throat, eyes, and ears - everywhere, with a beautiful thick, long-lasting head. This beer improved after 2 weeks of cold-conditioning at about 36F.

Procedure:

All grain was doughed into 3.50 gallons of 165F (74C) mash water in preheated Gott mash/lauter tun. Mash temperature stabilized at 153F (67C) and dropped to 150F (65C) over the 60 minute mash. 2 gallons of boiling water was added and stirred into mash as mashout and allowed to sit 10 minutes. Recirculated 1 gallon, then sparged with 175F (80C) to collect 8.25 gallons at 1.042. Vigorously preboiled 1 hour to reduce volume then boiled another hour with hop additions according to schedule above. Chilled with counteflow chiller into 7.5 gallon glass carboy and aerated for 30 minutes with aquarium pump and stone. Final yield: 5.25 gallons @ 1.056
