I'm pleased with this recipe! It yielded a nice drinkable mild with a pleasing flavor and little alcohol. The no sparge brewing gave the beer a nice malty sweet complex aroma that I don't seem to get when I sparge the grains. I used American Tettnanger, which is supposed to be the same as Fuggles so I suppose they could be used instead of the Tettnanger. I will probably try the beer again to see what could make it better. Perhaps I'll have time to culture up a pure strain next time. As it is, the dry yeast worked fine. Basically a nice session beer.

Finishing Gravity: 1.008

Primary Fermentation: 3 weeks
Ingredients:
- 8 lbs. Pale 2 row malt
- 5.2 oz. Chocolate malt
- 12 oz. Caravienne malt

- 1.25 oz. Tettnanger pellets 4.7%

- Edme Dry Ale Yeast
Procedure:
Mash the grains in a thick mash at 154 degrees for 60 minutes. Add 1 gallon of boiling water to mashout and rest for ten minutes. Drain the mashtun and top wort in kettle off to just over 6 gallons. After hot break add all hops in a hops bag. Boil for 60 minutes after the hot break. Force cool and aerate. Pitch rehydrated yeast. When fermention is complete, keg and prime with 1/3 C. corn sugar.
