A brew that I originally made while still an extract brewer. Converted to all grain. An excellent balance of bitter/sweet flavor accented by a delightful blend of hops. Belgian lace head to the bottom. Alc. = 5.2% abv. Enjoy!

Secondary Fermentation: 10 DAYS
Ingredients:
- 8.5 # PALE ALE MALT
- 1 # CRYSTAL ~40L
- 8 OZ. ROASTED BARLEY
- 8 OZ. CARA-PILS
- 1 OZ. NORTHERN BREWER @ 60 MIN. BOIL
- 1 OZ. HALLERTAU @ 30 MIN. BOIL
- 1 OZ. CASCADES @ 2 MIN. BOIL (FINISHING)
- .5 OZ.FUGGLES DRY HOP IN SECONDARY
- 1 TSP.IRISH MOSS
- WYEAST # 1272 AMERICAN ALE 2 YEAST - 32 OZ. STARTER
Procedure:
SINGLE INFUSION MASH @ 152 DEGREES. FOLLOW THE HOP SCHEDULE. DRY HOP THE SECONDARY FOR TEN DAYS WITH THE 1/2 OZ. FUGGLES. RACK TO KEG, FORCE CARBONATE.
