A nice, full bodied porter, with a head that lasts right to the end. A nice hop flavor, but not overpowering. The honey lends a bit of residual sweetness, but priming sugar would work as too.

Primary Fermentation: 7 days
Secondary Fermentation: 4 days
Ingredients:
- 7.25 lbs Light malt extract
- 1/2 cup molasses
- 1/2 lb Crystal Malt
- 1/2 lb Chocolate malt
- 1/2 lb Black malt
- 1 oz Northern Brewer hops-60 min
- 1 oz Northern Brewer hops-30 min
- 1/2 oz East Kent Goldings hops-15 mins
- 1/2 oz East Kent Goldings hops-10 mins
- 1 tsp Irish moss
- Wyeast #1968-Special London II
- 1 cup honey-bottling

Procedure:
Place crushed grains in 1.5 gals cold water, bring to 150-160°, hold 20 mins. Remove grains, rinse with 2 qt warm water. Bring to boil, add malt and hops as noted. Remove from heat, strain out hops. Pour into carboy with 2 gals cold water, top to 5 gals. Pitch yeast below 80°. Ferment to completion, rack to secondary to clear, bottle
