A nice, full bodied porter, with a head that lasts right to the end. A nice hop flavor, but not overpowering. The honey lends a bit of residual sweetness, but priming sugar would work as too.

Finishing Gravity: 1.024
Time in Boil: 60 mins
Primary Fermentation: 7 days
Secondary Fermentation: 4 days

Procedure:

Place crushed grains in 1.5 gals cold water, bring to 150-160, hold 20 mins. Remove grains, rinse with 2 qt warm water. Bring to boil, add malt and hops as noted. Remove from heat, strain out hops. Pour into carboy with 2 gals cold water, top to 5 gals. Pitch yeast below 80. Ferment to completion, rack to secondary to clear, bottle
