Specifics
Recipe type: Partial Mash
Batch Size: 5 gallons
Starting Gravity: 1. 080
Finishing Gravity: 1.024
Time in Boil: 60 minutes
Primary Fermentation: 8 days
Secondary Fermentation: 10 days
Ingredients:
- 6.6 pounds of 55/45 wheat extract
- 3 quarts of wild flower honey
- 1 pound wheat malt
- 1 pound victory malt
- 1 oz. of willamette hop pellets
- 1/2 oz. challenger hop pellets
- 1/2 oz. kent goldings hop pellets
- wyeast 3065 (broken and added to 2 cup starter)
- 1 tsp. irish moss

Procedure:
put crushed malts in grain bag in 1.5 gal. of 150 degree water for 55 min. add honey and the extract and sufficiant water to bring to 6 gal. bring to a boil, add the first two hops listed and boil for 45 min. add irish moss and the last hops and boil for 15 min. cool to 70 degrees and pitch the yeast. ferment as described, prime with 3/4 cup honey added to 2 cups water, boiled and cooled, bottle. cheers!!
