We're Parrotheads (Jimmy Buffett fans) and I wanted a beer for the summer concert and tailgate party. This beer turned out pretty good and has a minimal chill haze considering the limes are boiled with the wort. This beer should really be aged a minimum of 4 weeks before drinking. It has a very tart lime flavor to it at first sip. Consider it liquid Key Lime Pie with alcohol.

Procedure:

Boil 1.5 gallons of water and remove from heat. While water is boiling, grind 3 whole limes in a blender. Add DME and boil for 60 minutes. After 15 minutes of boiling, add ground limes (peels and all) and Northern Brewer hops and boil for 45 minutes. During last 15 minutes of boil add 1 tsp of Irish Moss. During last 5 minutes of boil add Hallertau hops. Add to 3.5 gallons of water in fermenter and top off to 5 gallons. Pitch with 1 pkg of ale yeast. Beer should be done fermenting by 7 days and ready to bottle with 3/4 cup of corn sugar. Beer should be aged at least 4 weeks before drinking.
