Primary Fermentation: 16 days in stainless keg @68 degrees
Secondary Fermentation: 5 days in stainless keg @50 degrees
Additional Fermentation: cold condition in corny keg 1 week

Procedure:

Mash grains 85 minutes @ 152 degrees. Last 10 minutes, raise mash temp. to 158 degrees. Recirculate wort back to mash tun for 10 minutes. (I use a small pump to accomplish this) Sparge 60 minutes with 170 degree water. Bring wort to boil. Boil 15 minutes before adding hops. 1 oz Hood and 1 oz Cascade for 60 minutes. 2 Cascade, 1 Hood and 1 Styrian Goldings for 30 minutes. 1 Cascade, 1 Hood and 1/2 Styrian Goldings for 5 minutes. Chill to below 80 degrees and pitch with Wyeast 1056 and 2 pkgs Edme (these two yeasts go wonderfully together!)
