This is one of the best beers I have ever made. Put it away in a dark corner of your basement for as long as you can stand it, and you will be rewarded.

Procedure:

Single Step infusion mash at 1.25 qt. per lb of grain (about 6 gallons US at 170 F) Mash for two hours and then infuse boiling water to 165 F, transfer to your lauter tun. Sparge untill runnings are 1.008 SG. This may take a good 8 gallons of sparge water. Boil this one at least 90 min to reduce the volume, you may need to boil longer to reduce down to a little over 5 gallons. Ferment in the primary a good two weeks and make a big starter of Wyeast American ale or white labs Californa ale, or about 3 fluid oz of washed yeast cake from a previous batch. Age in the secondary as long as you can stand it.
