My 6th Year of making this recipe. It is based on Pg 225 of Joy of Homebrewing but PERFECTED!!! Note, the complex sugars in the adjuncts makes this a beverage that tends to EXPLODE in your primary carboy. I strongly suggest a venting hose be attached to your airlock and immersed in a sealed 2 Liter Plastic Bottle. You can ignore this advise only if you were planning on repainting your house anyway.

Ingredients:
- Grains: 1 Lb American 6 Row @ 40L
- 6 Oz Black Malt @ 500L
- Malts: 7.5 Lbs English Light and 3/4 Lb Light Honey
- Note: You can use 2 3.3 Lb Cans M&F Light and 1 1.4Lb
- Can Alexanders "KIckers" Pale
- Boiling Hops: 2 Oz Cascade at 6.1%
- Bittering Hops: 1 Oz Willamette @ 4.2%
- ADJUNCTS: 2 Tsp Gypsum, 1/2 Tsp I Moss, 2 and 1/8 Tsp Cinnamon, 1/2 Tsp Nutmeg, 2 Tsp Allspice, 3 and 1/2 Tblspoons Freshly Ground Orange Peel, 2 Tblspoons Freshly Ground Ginger root
- Yeast: Wyeast Liquid #1056
Procedure:
Immerse Grains in Cold Water, Remove at Boil (usually 35 Minutes) Add Gypsum with Malts and Honey at Boil. Add ALL Adjuncts and I Moss at Final 15 Minutes of Boil. Add Finish Hops at Final 5.
