Ingredients:
- 1 # dwc caravienne
- 1/2 # dwc buscuit malt
- 6 1/2 # xlite dme
- 2 1/2 # orange blossom honey
- 2 oz tett hops
- 1 oz saaz hops
- 2 oz willemette hops
- 1 oz bitter orange peel
- 2 tsp star anise
- 1/2 tsp ground cumin
- 1 tsp fresh ground peppercorn
- 1 tsp crushed cardamom
- 1 tsp crushed coriander seeds
- trappist ale yeast in 1 qt. starter
- 1/2 # honey to prime
Procedure:
Steep grains for 30 minutes and rinse with 150 - 160 degree water. Bring to boil and add dme, honey and tett hops.After 30 minutes add 1 oz willemette hops. 15 minutes later add 1/2oz orange peel,1 tsp anise,cumin, and pepper.13 minutes later add 3/4 oz willemette and 3/4 oz saaz hops,and remaining spices.Dry hop with 1/4 oz willemette and 1/4 oz saaz for 3 weeks.prime with honey and let age 1 month.
