Fruity,hoppy,spicy, and very complex.Everything a good belgian beer should be.Alcohol level is very deceptive!

Batch Size: 5 gallons
Starting Gravity: 1065
Finishing Gravity: 1014
Time in Boil: 60 minutes
Primary Fermentation: 7 days
Secondary Fermentation: 21 days



Steep grains for 30 minutes and rinse with 150 - 160 degree water. Bring to boil and add dme, honey and tett hops.After 30 minutes add 1 oz willemette hops. 15 minutes later add 1/2oz orange peel,1 tsp anise,cumin, and pepper.13 minutes later add 3/4 oz willemette and 3/4 oz saaz hops,and remaining spices.Dry hop with 1/4 oz willemette and 1/4 oz saaz for 3 with honey and let age 1 month.
