Not a true Weizen, but I couldn't pass up on the name.

Finishing Gravity: 1.008
Time in Boil: 60 min
Primary Fermentation: 7 days @ 75 degrees
Secondary Fermentation: 7 days @ 75 degrees
Ingredients:
- 6.5 lbs M+F Wheat Extract
- 1 lb. German Wheat
- 2 lbs Honey
- 2 cans frozen apple juice concentrate
- 2 oz Hallertau hops
- 1 tsp irish moss
- 1 pkg. Nottingham Ale Yeast
Procedure:
Mash wheat for 45 min. Bring to boil, remove from heat. Stir in wheat extract, return to heat. Add one ounce Hallertau hops when boiling. Boil 30 minutes, add 1/2 ounce Hallertau hops and irish moss. At 45 minutes, add 2 lbs honey. Place 2 cans frozen apple juice and one gallon of water in fermenter. At 56 minutes, add last 1/2 ounce Hallertau. Remove from heat @ 60 minutes, cool to 90 degrees. Strain wort into fermenter, top off with COLD water to 5 gallons. Temp. should be approx. 70-75 degrees. Pitch yeast
