"Stop your Weizen" bock

Strong, pleasant brew. This beer continues to improve with age. Very favorable comments from friends and relatives. This one is a bit lighter in color than a true dark weizenbock. If you would like a darker look add 1/4 lb 120L crystal malt and subtract 1/4 lb cara munich malt.

Finishing Gravity: 1.012
Time in Boil: 90 min
Primary Fermentation: 70 degrees 7-10 days
Secondary Fermentation: 55 degrees 7-10 days

Mash grains at 152 degrees for 90 min. Boil 90 minutes adding 1 1/4 oz northern brewer hop pellets after 30 min, anad adding 2 1/4 oz pellets after 85 minutes. Let steep an additional 5 minutes.
