Slightly modified from BYO recipie. Similar to Honker's Ale from Chicago. Toured the brewpub, and they use the Slovenian hops. Fuggles is a good substitue. Carbonation is a little light, but this is very smooth and tasty. Hop quantities based on 4.4% alpha.

Ingredients:
- 5 lbs Amber Malt Extract
- 8 oz British Crystal Malt
- 2 oz Pale Chocolate Malt
- 1 lb Turbinado Sugar (Sugar in the Raw)
- 3 1/2 oz Slovenian Styrian Goldings Hops
- Lg packet Wyeast London Ale #1028
Procedure:
Steep the grains for about 30 min. Bring total up to 2 gal. Add extract and bring to boil. Boil 15 min & add 2 3/4 oz hops. Boil 45 min. Add 3/4 oz hops and sugar. Boil 30 min. Cool and pitch yeast. Use corn sugar for priming.
