I love the Hefe IV yeast from White labs. It is distinctly a German wheat yeast, but it is smoother and has much less banana than other examples.

Primary Fermentation: 68 F
Secondary Fermentation: 55 F
Ingredients:
- 4lbs Dark wheat malt
- 1.5 lbs pale wheat malt
- 1 lb Durst Dark Munich
- .5 lbs Durst Crystal Malt
- .25 lb Special B
- 2.75 lb DWC Pilsner Malt

- 1 oz. Hallertau Hersbrucker leaf hops (60 min, 5.1%AA)

- 1 pt. starter White Labs Hefe IV
Procedure:
triple decoction is best but a step infusion with rests at 128, 148, 154, and 168. I have used a hybred mash infusing from 128 to 148 and then doing a decoction from 148 to 154 and then a thin decoction from 154 to 168. Each rest was about 30 min.
