Vodeez Can't Fail Pale....Bock

This was my first all-grain beer and I blew through the sparge in about 10 minutes. My boss at the Brewstore, a certified beer judge, and GOLD medal MEAD winner at the 2000 AHA competition loved the malt profile and said he would give it 40 out of 50 pts. Thus the name Can't Fail Pale. I have since made 3 other all-grains, and with much improved sparge technique, am taking another run at this one. Like most beers..this one only gets better with age.

Time in Boil: 60 minutes
Primary Fermentation: 3 to 5 days
Secondary Fermentation: 21 DAYS
Ingredients:
- 9 lbs. German Pilsner Malt
- 3 lbs. Domestic 2-row
- 1/2 lb. 90L Crystal Malt
- 3/4 lb. Carastan
- 2 oz. Fuggles (Boil)
- 2 oz. Hallertau (Aroma)
- 1007XL German Alt Yeast
Procedure:
Single Infusion Mash. Rest grains in 4 gallons (155 deg) for 1 hour. Sparge 4 gallons at 185-190 deg. for at least 30 minutes. Bring to boil and add Fuggles Hops for full 60 min boil. Steep Hallertau Hops 15-20 minutes after boil. Pitch yeast at 65 deg.
