This recipe is actually a mistake of my standard Irish Stout. After picking up what I thought was ingredients for a batch of my favorite stout I discovered instead of dark LME I was sold light LME. After being all set up for the brew day I decided to use the ingredients I had. The results were very favorable and have become my second favorite recipe.

Batch Size: 5 Gallon
Starting Gravity: .040
Finishing Gravity: .024
Time in Boil: 60 min
Primary Fermentation: 6 days
Secondary Fermentation: 2 weeks
Additional Fermentation: Aged in bottle for 3 weeks
Ingredients:
- 4 lbs. LME (light)
- 2 lbs. DME (plain light)
- 10 oz. Crystal Malt
- 4 oz. Roasted Barley
- 2 oz. Black Patent
- 3/4 oz. Kent Goldings (pellets)
- 1 Tbl. Vanilla extract in primary fermenter
- 1 Tbl. vanilla extract at bottling
- 2/3 cup corn sugar to prime
- Wyeast Irish Ale
Procedure:
Add speciality grains to 5 gallons water, bring to boil.
Remove from heat and add liquid and dry extracts and stir until dissolved.
Bring back to boil and add Kent Goldings.
Boil for 60 min.
Cool wort to 70-75 degrees, pitch yeast, add vanilla
Transfer to carboy after 6 days.
Ferment additional 2 weeks.
Add vanilla, corn sugar and then bottle.
Age for 3 weeks
