Primary Fermentation: 12 days @64 degrees
Secondary Fermentation: 18 days@64 degrees
Ingredients:
- 11 lbs. lite extract
- 1 lb. 20* crystal malt
- 3 oz. choc. malt
- 1 lb. victory malt
- 2 oz. 80* crystal malt
- 2 lbs. 2 row malt
- 3 oz. challenger hop pellets
- 1 oz. east kent hop pellets
- 2 lbs. lite dme
- 1 tsp. irish moss
- Wyeast 1028 (added to a 2 quart starter)

Procedure:
Steep grains in 2.5 Gallons of 155* water for 45 min. Sparge w/2 gallons of 170* water. Add extracts, bring to a boil. Add 2 oz challenger hops, boil for 30 min. Add 1 oz challenger hops continue to boil for 15 min. Add 1/2 oz east kent hops, boil 8 min., add the other 1/2 oz east kent hops, turn off heat. Chill to 70*, pitch yeast, aireate well. Follow fermentation procedures. I kegged this beer, it is as of yet, young and not ready to consume. Initial tastings, High alcohol, big flavor. I say, I say, damn good beer boy!!!!
