No Cologne Kolsch

My first attempt at this style and absolutely not my last!! The fruity complexity of this beer is hard to describe. Very flavorful at cellar temperature. After ten years of homebrewing I can't think of another brew that was better than this one. I'm not German but I'm thinking of converting.

Specifics

Recipe type: All Grain
Batch Size: 5 gallons
Starting Gravity: 1.040
Finishing Gravity: 1.010
Time in Boil: 90 minutes
Primary Fermentation: 58 degrees, 10 days

Procedure:

Mash in at 122 degrees and hold for 30 minutes. Raise to 158 for 60-90 minutes until conversion. Mash out and sparge. Add 1 oz Tettnang for 60 min., and 1 oz for 20 min. Boil 90 min. in all.
