Very good IPA. Extremely bitter at first. Bitterness settled down after about 3-4weeks in the bottle. Turned into an outstanding beer. The Cascade hops are very noticable in aroma. Great head and body. A little cloudy may want to add finings in secondary. Primary fermentation was very active+fast. Very fruity(grapefruit AKA Cascade hops..) flavor.

Time in Boil: 60 min
Primary Fermentation: 7 Days @ 70F
Secondary Fermentation: 14 Days @ 70F
Ingredients:
- 3.3lbs John Bull Light Extract
- 3lbs Light Extract DME
- 1lb 20L Crystal
- 1/4Lb Torrified Wheat (for head retention)
- 1oz Challenger pellets 5.6 AA (60 min)
- 1/2oz Liberty pellets 5.2 AA (15 min)
- 1/2oz Liberty pellets 5.2 AA (last 5 min)
- 1/2oz Cascade whole hops 5.1 AA (dryhop)
- 1/2oz Liberty Pellets 5.2 AA (dryhop)
- Tsp Irish Moss
- Wyeast 1098 British Ale yeast
Procedure:
Steep Crystal + Wheat about 15-20 min prior to boil. Add extracts + Challenger hops at boil. Last 15 min of boil add Liberty hops. Turn off stove last 5 min add finishing hops and cover. Primary seven days rack to secondary. Add dry hops last week of secondary fermentation.
