Jurassic Steam Porter

If you offered me an Anchor Porter I'd decline and drink one of these instead. This is not a clone recipe and was inspired by a desire to create a more burnt/ charcoal porter flavor with lager yeast characteristics. The use of "steam" yeast was in order to ferment at 68 F.

Recipe type: All Grain
Batch Size: 5.5 gallons
Starting Gravity: 1.054
Finishing Gravity: 1.024
Time in Boil: 60 minutes
Primary Fermentation: 6 gallon carboy 7 days
Secondary Fermentation: 6 gallon carboy 10 days
Ingredients:
- 9 lbs 2 row American
- 1 lb Munich
- .5 lb Roasted Barley
- .5 lb Chocolate
- .8 lb Crystal 60
- 4 oz Black Patent
- .4 oz Northern Brewer pellet(60 min)
- .5 Kent Goldings plug (20 minutes)
- .5 Kent Goldings plug (5 minutes)
- 1/4 teas Irish Moss (10 min)
- Gypsum/ CaCO3 (water adjustment)
- Wyeast 2112 California Common
- sl less than 1 cup corn sugar fopr priming
Procedure:
Single step mash at 156 F for 12 lbs grain, held till conversion complete by Starch test ( about 1 hour). Sparged at approx. 175F. Used easy masher to transfer to fermenter and leave trub in boiling pot.
