THIS IS THE FIRST CIDER THAT I'VE MADE. IT IS A VARIATION OF A FRIENDS RECIPE.
IF YOU WANT A STRONGER APPLE FLAVOR YOU CAN DOUBLE THE APPLE EXTRACT, AND PRIME WITH APPLE CONCENTRATE.
I LIKE THIS RECIPE. ITS VERY CARBONATED, SO WE ARE GOING TO BOTTLE IT IN CHAMPAGNE BOTTLES FOR MY BROTHERS GRADUATION, THUS THE NAME.

Secondary Fermentation: 1 WEEK
Ingredients:
- 4 GALLONS FILTERED APPLE JUICE
- 3 LBS. WILDFLOWER HONEY
- 4 OZ. APPLE EXTRACT
- 3/4 CUP PRIMING SUGAR
- WYEAST #1056 AMERICAN ALE YEAST
Procedure:
BOIL HONEY WITH 1 GALLON OF WATER.
ADD HONEY TO APPLE JUICE IN FERMENTOR AND PITCH YEAST.
LET FERMENT FOR 1 WEEK, AND TRANSFER TO SECONDARY FERMENTER FOR AN ADDITIONAL WEEK.
ADD APPLE EXTRACT AND PRIMING SUGAR AT TIME OF BOTTLING.
(YOU CAN PRIME CIDER WITH A CAN OF APPLE JUICE CONCENTRATE TO ENHANCE APPLE FLAVOR)
BOTTLE AND LET CARBONATE FOR AT LEAST 4 WEEKS.
