Honeydew! Pretty peculiar, but quite tasty! Don't be afraid to use honeydew melons in weissbier either - I've heard tell that it's a terrific alternative to lemon weiss.

Primary Fermentation: three weeks
Secondary Fermentation: four months
Ingredients:
- 8 lbs. hopped wheat beer kit
- 2 lbs. crystal malt
- 1 1/2 lbs. honey
- 5 lbs. honeydew melons (two large melons)
- Wyeast Belgian wheat yeast (primary)
- Wyeast Lambic yeast (secondary)
Procedure:
Grate honeydew melons with a cheese grater or grind them with a a meat grinder - both are a *lot* easier than slicing them into tiny little bits. The juice will go everywhere, but make sure it gets into the carboy. There's a lot of it.
