The use of Brewery fresh Yeast,( in this case,RIVERSIDE BREWING CO.)seems to help out quite a bit. this Stout has a very smooth,wide flavor profile.-Uncle Buck

Recipe type: All Grain
Batch Size: 5 Gal.
Starting Gravity: 1.048
Finishing Gravity: 1.010
Time in Boil: 60 min.
Primary Fermentation: 2 Days
Secondary Fermentation: 6 Days
Additional Fermentation: -o-
Ingredients:
- 10 lbs. Pale malt
- 2 lbs. carapils malt
- 1 lb. black patent malt
- 1 lb. chocolate malt
- 1 lb. roasted barley
- 1 oz. cluster hops
- 2 oz. willemette hops
- 300ml. #1056 Amer. Ale Yeast (RBC)
Procedure:
Mash at 150 deg.F for 1 hr. sparge at 180+deg. 1oz. cluster-boil 1oz. willemette-aroma(30 min.) 1oz.willemette-Fin.(2min.)chill wort quickly,Pitch Yeast and stand back!!
