RIVER RAISIN IPA

When fermentation was complete Specific Gravity Beg. 1.071
Ended at 1.012.
Tasted it, and decided to add 1 oz.East Kent Goldings, and 1 oz. Northern Brewer, run through coffee pot, with 10 cups of water, collected, and added to fermenter. Put 3 oz. of white oak chips in same coffee pot; collected 6 cups of oak tea, added to fermenter.
Why? 1. Wanted more hop flavor.
2. The Oak Chips gave no oak flavor, but did smooth the IPA out quite fast, making it drinkable sooner.
SRM 13 Bottom Line it was JUST GREAT.

Ingredients:
- 2 Row Harrington Pale Ale 11.5 lbs
- DWC Wheat 1/2 lb.
- Crystal Malt 90L 1/2 lb.
- Carapils 1/2 lb.
- Hops: 50 IBUs
- 5.8AUU East Kent Goldings Bittering 30IBUs 1.3 oz. Beg.
- 5.8AUU East Kent Golding 10IBUs .8 oz. 30 minutes
- 5.8AUU East Kent Goldings 10IBUs 1.4 oz. 15 minutes
Procedure:
Bring 4.25 gallons of Water to 176 add grain, then I do a mash down to 146, raise temperature to 168, hold for 5 minutes. Add to sparage vessel, and sparage with 5 gallons of 168 water. collect 6.5 gallons.
Bring to boil, add first quota(1.3 oz.) as soon as wort comes to boil, boil 30 minutes, add second quota(.8 oz.), boil 15 minutes more. Run through wort chiller to 70, add to fermenter,add yeast. I used on this one Wyeast 1056. I like Yeast Lab 09 better.
