Summer Wheat Beer

Brewed this for my bachelor party and it went fast! It has a nice amber color and forms a very creamy head. There is a citrus nose and flavor, but it is not overly sweet or dominating. It was smooth, light and refreshing. It's a nice and easy summer brew.

Batch Size: 5 gallons
Starting Gravity: 1.040
Finishing Gravity: 1.010
Time in Boil: 60 minutes
Primary Fermentation: 12 days plastic
Secondary Fermentation: none
Additional Fermentation: none
Ingredients:
- 6.6 lbs. Wheat Extract (Muntons)
- 1 oz. Tetanger hop pellets
- 1 oz. Halleurtaeur hop pellets
- Irish moss
- Zest and juice of one lemon
- Dry ale yeast, not sure what brand
Procedure:
Bring six gallons water to a boil. Dissolve extracts in water. At 15 minutes into boil add Tetanger hops. At 40 minutes add the Halleurtaeur hops. Add 1 tsp Irish moss at 50 minutes. When finished with the boil add the lemon zest and juice. Cool with an immersion chiller. Strain into fermenter.
Keg with 1/3 C. of corn sugar.
