Very simple and tasty Barley wine. Hits about 12% alc/vol.
Aussie's my Australian Shepherd, he helps me brew and Whines if I don't share with him.

Recipe type: Extract
Batch Size: 5 US Gallons
Starting Gravity: 1.107
Finishing Gravity:
Time in Boil: 1 hr.
Primary Fermentation: 1 month
Secondary Fermentation: 4 months
Additional Fermentation: 1 month bottle (min)
Ingredients:
- 12.5 lbs Pale LME
- 3.0 lbs Amber LME
- 0.5 lbs honey
- 3.5oz Northern Brewer 60 min
- 1 tablespoon Irish moss 60 min
- 1 oz Cascade 15 min
- 2 packs Pasture Champagne yeast
Procedure:
Boil the 12.5 lbs Pale LME, 3.0 lbs Amber LME, 0.5 lbs honey, 3.5oz Northern Brewer and 1 tablespoon Irish moss for 60 min.
Add the 1 oz Cascade during the last 15 min of the boil.
Rehydrate the 2 packs Pasture Champagne yeast.
Cool, rack to primary, pitch yeast and WAIT.
