Burtonize water before hand. It makes a big difference. I didn't get as long a secondary as I hoped due to the summer work season but a long time in the bottle made it just right.
Specifics
Recipe type: All Grain
Batch Size: 5 gallons
Starting Gravity: 1.065
Finishing Gravity: 1.013
Time in Boil: 90 min
Primary Fermentation: 4 days
Secondary Fermentation: 2 weeks (ideally)
Additional Fermentation: bottle conditioned
Ingredients:
- 10 lbs pale malt
- 1/2 lbs crystal 40
- 1/2 oz challenger 90 min
- 1 oz challenger 60 min
- 1/2 oz challenger 30 min
- 1 oz east kent goldings (hop tea)
- 3 tsp gypsum
Procedure:
temperature step: 40-60-70 (unless you have british malt than an infusion is in order)
