Don't invite your brew buddies over for the first tapping...the beer will be gone. Robust, good dark nasty porter taste. Good holiday brew.

Starting Gravity: 1.068
Finishing Gravity: 1.018
Time in Boil: 1 hour
Primary Fermentation: 7 days at 68F in glass
Secondary Fermentation: 10 days at 68F in glass
Ingredients:
- 9 lbs. N.American 2 row malt
- 0.5 lb. Oatmeal
- 0.5 lb. Chocolate Malt
- 2.0 oz. (1/8 lb.)American Black patent malt

- 2 ounces Nugget (AA% 15.0)
- 2.5 ounces Cascade (AA 5.4 or so)

- Wyeast Irish Ale yeast from starter
Procedure:
Mashin all grain at 122F 1 quart water per pound of grain. Hold 30 minutes. Add additional 1/2 quart water per pound of grain, raise temperature to 148F. Hold 1 hour. Raise temp to 156-158F, hold 1 hour. Mashout at 170F 10 minutes.
Sparge with 20 quarts hot water. Add 1/2 ounce Nugget, bring to boil. Add remaining nugget hops as boil begins. Boil 45 minutes, add 1 tsp irish moss. Continue another 5 minutes, add 2.5 ounces Cascade hops, boil another 10 minutes. 1 hour total boiling time.
Chill, remove hops and ferment. Force carbonate, or natural carbonate as usual.
