This turned out a very tasty ale, but: something I will not
do again: Dry hop with cascades (to lemony, citrusy), Fuggles
or Goldings should work much better.
Specifics
Recipe type: All Grain
Batch Size: 5 gals
Starting Gravity: 1.042
Finishing Gravity: 1.012
Time in Boil: 90mins
Primary Fermentation: 7 days
Secondary Fermentation: 14days
Ingredients:
- 8lbs Schrier 2 row
- 2 tsp burton salts
- 1 tsp irish moss
- 2 oz goldings
- .5oz cascades
- Whitbread yeast from secondary
Procedure:
Single infusion mash 155F 75 mins. 4 gal 175F sparge with 1/3
tsp lactic acid to reduce ph, total sparge 8 gals.
Added burton salts to boil. Boil 30 mins, add 1oz goldings, boil
30mins add 1 oz golding and irish moss, boil 30mins. Total
boil 90mins. Cool and pitch yeast. I used the yeast from
secondary of a porter which was YeastLabs Whitbread and enough
of the porter to give the beer some color. Ferment 7 days,
transfer to secondary with .5oz cascade dry hop 2 weeks.
OG 1.042 FG 1.012 IBU's 38.
