DTM Christmas Ale

This is an ale, similar to Bass, although a bit overcarbonated. It is called DTM Christmas ale b/c I gave my brother in law, DTM, a homebrewing kit for christmas. The brew was his first batch and brewed the day after Christmas.

Primary Fermentation: 4 days
Ingredients:
- 3 lb Muntons Light DME
- 2 lb. LD Carlson Light DME
- 1 lb. Dark Brown Sugar
- 1 lb. Crystal Malt 44 L
- 1 oz. Fuggle 4.2 AA
- 1 oz Golding 6.0 AA
- 2 tsp Gypsum
- 1/2 tsp NaCl
- 3/4 C. Corn Sugar
- Edme Ale Yeast
Procedure:
Combined salt, gypsum, and 2 gallons water. Steeped grains until water was 180 degrees. Removed grains, brought water to boil. Added extracts and sugar. Boiled for 5 minutes and added Golding hops. After 30 minutes added 1/2 oz. Fuggle hops. After 50 minutes added 1/2 Fuggle hops. Added Irish moss at 50 minutes. rehydrated yeast. Cooled, strained out hops and added to 3.5 gallons cold water. Pitched yeast. Primed and bottled with 3/4 C. corn sugar.
