This recipe was a freind's idea, who was trying to capture the taste of Newcastle Brown Ale. We're not certain how close we came, but it sure taste great.

Time in Boil: 40 minutes
Primary Fermentation: 9 days
Secondary Fermentation: none
Additional Fermentation: 2 weeks
Ingredients:
- 4 lbs. Emerald Isle dark malt extract
- 2 lbs. amber dry malt
- 1/4 cup chocolate grain
- 2 cups biscuit
- 1 oz. Cascade hops (boil)
- 1 oz. Saaz hops (finish)
- 1 cup brew sugar
- 8 oz. Malto Dex
- 2 pkgs. Munton's Ale yeast
Procedure:
Steep grains until boiling begins - add liquid malt, boil 10 minutes - add dry malt & Cascade hops & 1 cup brew sugar & 8 oz. Malto Dex, boil 30 minutes - add Saaz hops for the last 5 minutes - 9 days fermentation. 2 weeks bottled. All at room temp.
