Honey Winter Wheat

This is one of my favorites so far and has gotten good reviews from all that have tried it. Calculates to about 18 IBU, a little high for Wheat beer but not overly. Alchohol content is right at 5%. More honey would bump the % some and not hurt the overall beer
Specifics
Recipe type: Extract
Batch Size: 5 Gal
Starting Gravity: 1.060
Finishing Gravity: 1.012
Time in Boil: 45 Nin
Primary Fermentation: Approx 1 week
Secondary Fermentation: Approx 2 weeks
Additional Fermentation: Condition in Bottle for at least 3 weeks
Ingredients:
- 6.6 lbs Wheat Malt Extract
- 2.5 lbs raw honey
- .5 lbs 40L Crystal Malt
- 1 oz Cascade Whole Hops (6% Alpha)
- 1/2 tsp Irish Moss
- Yeast Labs Belgian Wheat W52
- 1/2 Cup honey for priming
Procedure:
Add Crystal in straining Bag to 2.5 gal water
bring to boil slowly, remove crystal just prior to boil.
Remove from heat, add Malt extract
Bring to boil and boil for 10 min.
Add Cascade hops
Boil for 30 Min
Add Irish Moss
Boil for 15 Min
Remove from heat and Add Honey.
Let stand for 5 min
Cool and add to carboy, bring volume to 5 gal and pitch yeast
