IBU's seem high on paper, but combined with this yeast it makes an excellent brew. Longer boil creates beautiful light copper color and excellent head retention.

Ingredients:
- 12 Lbs Western 2-Row
- .5 Lb Crystal 60L
- .5 Lb Dextrin
- 1 oz Challenger 7.9% Pellet (60 Min.)
- 1 oz Kent Goldings 6.7% Pellet (15 Min.)
- 1 oz Fuggles 5.0% Pellet (5 Min.)
- 1 oz Fuggles 5.0% Pellet (Dry Hop in Secondary)
- 1 tsp Irish Moss (10 MiN.)
- English Ale Liquid Yeast
- 3/4 cup Corn Sugar
Procedure:
Mash all grains in 4.2 gallons of 153 degree water for 90 minutes. Sparge with 6.75 gallons of 170 degree water. Sparge enough for 7 gallon boil. Follow hops schedule. Total boil of 90 minutes. Immersion cool to 70 degrees. Pitch yeast. Primary 6 days. Rack to secondary. Add Dry Hops in hop sack. Secondary for 7 days.
