Ingredients:
- 6.3 lbs. hopped light malt extract
- 1 lb. lght DME
- 1/4 lb. toasted pale malt
- 2 oz. Cascade hops: 10 HBU
- 1/2 oz. Halletauer hops
- 1/4 tsp. irish moss
- 1 pkg. Edme ale yeast
- 1 1/4 cup light DME for priming
Procedure:
Toast grain at 350 for 20 minutes, crack, place in muslin bag and add to 2gallons cold water.
Bring to a boil.
Remove spent grains.
Add malt extracts to boil, plus 1 oz. Cascade hops.
Boil 45 minutes.
Add 1 oz. Cascade hops.
Boil 10 minutes. Remove from heat.
Add 1/2 oz. Hallertauer and steep 5 minutes.
Sparge into fermenting bucket. Bring up to 5 gallons, by adding bottled (always) water. Pitch yeast when cool.
Ferment 7 days.
Transfer to secondary fermenter, and ferment 7 days.
Prime with malt, bottle, keep at room temperature for 1 week. Move to cool
area. Age at least 2 weeks, then enjoy.
