Primary Fermentation: 7 days in glass
Secondary Fermentation: 10 days in glass
Ingredients:
- 9 lbs. N. American 2-row
- 1 lb. N. American 40L Crystal Malt
- 3/4 oz. Columbus Hops (60 min) 15.4%AA
- 1 oz. Columbus Hops (10 min) 15.4 %AA
- Irish Moss
- Wyeast English
Procedure:
Stepmash in canner
Mashin 122F 1qt/lb of grain, Protein Rest 1 hour
add 1/2 qt/lb of grain to thin mash, raise to 148F, hold 1 hour. Raise to 158F, hold about 45 min. Mashout 10 minutes at 170F.
Add 3/4 oz. Boiling hops just as wort comes to boil to prevent boilover. After boiling 45 min, add irish moss, 5 minutes later add flavor hops.
Chill wort to 70F, pitch yeast from starter. Ferment at 68F.
