This is my second try at this style. The first attempt is a very good beer, it placed in two contests, but was too hoppy for the style. This beer has a nice malty noise, and is a beautiful ruby brown color.
Specifics
Recipe type: All Grain
Batch Size: 5 gallons
Starting Gravity: 1.054
Finishing Gravity:
Time in Boil: 75 minutes
Primary Fermentation: 1 week @ 45-50F
Secondary Fermentation: 3 weeks @ 45-50F
Ingredients:
- 7 # Great Western 2-row
- 4 # German light Munich
- 3/4 # 20 L Crystal
- 1/4 # Belgian Aromatic
- 2 oz Chocolate Malt

- 1/2 oz Norther Brewer pellets 8.8 % 60 minutes
- 1/2 oz Halletaur pellets 4.1% 30 minutes
- 1 t. Irish moss last 10 minutes

- IBUs from hop wheel = 25 IBU
Procedure:
Strike with 3 gallons @ 138F => 128F protien rest for 15 minutes. Used direct heat in short bursts to raise mash temp to 155F. Sparged to collect 6 1/2 gallons of runnings. Boiled for 75 minutes. Added hops as indicated above. Chilled using imersion chiller for 30-40 minutes.
