The most aptly named beer I've ever had! She's very complex--tall and strong; somewhat bitter but not at all harsh. She has a body and a mouthfeel that is just beyond comparison, and oh, that head!

Batch Size: 5 Gallons
Starting Gravity: 1.051
Finishing Gravity: 1.015
Time in Boil: 1 Hour
Primary Fermentation: 7 Days
Secondary Fermentation: 7 Days
Ingredients:
- 3.5 lbs Muntons Dark hopped LME
- 3.5 lbs Muntons Amber hopped LME
- 1oz Hallertau
- 1oz Fuggles or Willamette
- Edme Ale Yeast
- 3/4 Cup Corn Sugar or 1-1/4 cups DME for priming
Procedure:
Rehydrate yeast in 1 pt. boiled, cooled water and 2 tsp corn sugar.
Bring 2 gallons of water to a boil. Add LME and Hallertau hops. Boil for 60 mins. Add Fuggles and remove from heat, steep 15 minutes. Cool wort and rack into primary. Add water to make 5 gallons. Pitch yeast starter at 75 F and aerate very well. Cover and airlock. When fermentation begins, slowly move temp to 68-70 F.
