The 2 lbs. of sugar may seem strange but it really doesn't
hurt the flavor of this beer and it gives the % alcohol a
big boost.

Primary Fermentation: 1 week
Secondary Fermentation: 1 week
Ingredients:
- 6.6 lbs munton and fisons light extract
- 3 lbs light clover honey
- 2 lbs corn sugar
- 2 oz cascade hops(boiling)
- 1 oz cascade hops(finishing)
- yeast nutrient(optional)
- 1/2 lb chocolate malt
- 1 pkt. munton and fison ale yeast
Procedure:
Put the chocolate malt in 2 gallons cold water and heat to
boil. Remove grains when boiling commences and put in the
boiling hops, corn sugar and extract. After 45 minutes add
the honey and finishing hops. Sparge into fermenter with
cold water to 5 gallons. Pitch yeast when cool.After
secondary fermentation, bottle and let beer condition
in the bottle for 2 weeks.
